Sir Argento (Race Day - Packed Powder, by The White Fox) is currently racing at Emerald Downs in Washington. He has run thrice, finishing third in his second start. He was ninth in his last race on June 1 (pictured below).

That coloring, with a dorsal stripe? If he weren't a TB, I believe he could called a red dun.

Actually looks like he may been clipped at some point
Nd1 is quite common in TBs - it causes dorsals and sometimes primitive markings but not the dilution of true dun

I will admit I know very little about colors or genetics or how horses are registered. Bedtime Story, who won the G1 Chesham at Ascot by a huge margin, is listed as "gray or bay" by the Bloodhorse and by the Racing Post (she's listed there as gb f). Is that a way of saying she is a roan?

Most North American greys get registered as grey/roan, but they are all grey. Actual roan does not exist in the TB breed, but for about 5 horses from one mutated line in one place in the world.
All greys start out as a normal base colour - bay, black, chestnut, buckskin, dun etc. Grey is a pigment disease that causes the pigment producing cells to overproduce pigment and eventually burn out.
Bedtime Story is likely bay going grey but I've not seen them registered as both before. Perhaps they were unsure at the time she was registered if she'd inherited the grey gene or not. It's usually pretty obvious tough.

I've only seen that with Wetherbys (British/Irish stud book) and less times than I could count on one hand. So I guess they weren't sure and said, well she is either grey or bay. But they put grey first cause that is what they felt she was?

Nice-looking yearling. Japan manages to breed white TBs that are still well-conformed horses, something with which US breeders seem to struggle.
